Happy 100th! & "I'm Sexy and I Know It!"

No!  I am not 100 years old!  Today's post is my 100th blog post.  That is a big deal for me.  I have started other blogs in the past and have never continued on with them.  With this one, I have written to all of you for 100 days in a row!  That just blows my mind.  This is something that I a very passionate about, and knowing that I am helping others out there with their health and wellness journeys, is worth talking about.  Here's to the next 100 days...Water glasses UP...CHEERS...drink up!

"I'm Sexy and I Know It"...That was my alarm this morning and every morning at 5:30am(except on weekends and holidays)...It's a reminder of ALL the hard work I have done in the past ALMOST year to get where I am today...Feeling GREAT!  So...it's Back at it today!  AND IT'S TUESDAY ALREADY!!!  It was really tough to get out of bed this morning...key word being "bed" and not sleeping bag on air mattress in a tent.  It was so nice last night to get into bed and lay my head on my pillow.  BUT as I said it was tough to get up this morning, especially at 5:30am.  I did hit the snooze button twice though.  Then I heard, "I'm Sexy and I Know It" coming from my iPhone again.  "Yeah, yeah...I'm up", I thought.  We did sleep in over the weekend but not too late.  It's hard to sleep in when your not 100% comfortable.
SO...if I can get out of my comfy bed at 5:30am after sleeping in a tent all weekend, then YOU can get out of bed and get to your workout too!  No excuses!  The Good-kind-of-Change is not going to happen without hard work and dedication.  The only change you will get is the scale numbers increasing, the tape measure getting too small, and the washing machine is going to make all your clothes too small...wink..wink..Those are not options on this journey.  So pull yourself together after that wonderful long weekend and get back to it!  Even if it wasn't a LONG weekend for you, weekends can be challenging for many, so think about your goals and get back on track and work hard for the Good-kind-of-Change.  And it WILL happen!  You will earn your body!


Today's workout...
Instead of backtracking and doing Workout 1 & 3 of Jillian's KickBox FastFix, I did 2 & 3 instead.  I did double cardio over Saturday & Sunday, Rest day on Monday and back to my planned schedule today.  Tomorrow I will do Cardio again.  Maybe a spin in the morning and C25K tomorrow night.  I see how I feel.

Today's food...
Breakfast:  Vanilla Greek Yogurt with Holy Crap and Homemade Graham Cracker

See, I saved the "Crap" for breakfast this morning!

Seriously though, this cereal, "Holy Crap", is really great on top of yogurt.  I haven't tried it yet with milk, maybe next week.  I only ate a half serving this morning because I wanted to try another one of my Graham Crackers that I made yesterday.  SO good!

Lunch: Salmon & Barley & Roasted Cauliflower and Almonds

This was so delicious! 

Snack: Chocolate Almond Butter Banana Freeze
This is so much more refreshing than ice cream.  I don't even miss ice cream, since I have a delicious treat like this to enjoy.
It looks like there is a lot of chocolate on this one, I just didn't stir it in yet.  I used it more as a topping.  Variety is the spice of life!  So is Dark Chocolate! LOL

Tonight was our daughter's last dance class was tonight, so dinner was a little bit later tonight. 
She was WONDERFUL! 

 
In this picture here, she is doing her Butterfly Runs.  LOVE IT!  She loves to dance.

Dinner: Roasted Chicken and Mixed Vegetables
Since yesterday was a holiday and the grocery stores were all closed, I didn't really prepare for today's food all that well.  And with dance tonight, I needed something quick and easy.  
                                                      
After class I went to the grocery store and picked up one of the store's family size roasted chicken.

While at the grocery store I remembered to pick up the unflavored gelatin for the making of the marshmallow tonight.  I may get some S'mores made if I can keep my children out of the Graham Crackers that I made last night...lol.  At least I know that they like them!


Could this summertime treat be CLEANED UP???  I think so!

I made the marshmallow tonight, but it has to sit overnight,(it does appear to resemble & taste like marshmallow, so it should work)...that's right!...I tasted it, and it tasted nice, very smooth.  Tomorrow I will cut it into pieces and make a S'more.  I want to make sure everything works out before posting the Cleaned Up S'mores recipe.  Now remember though, just because they are clean, doesn't mean you can eat them all.  They still have calories.
These S'mores are very time consuming to make, but we are worth it!  Right?  It's not like you are going to be eating these every weekend, all summer long.  It's a TREAT!  I will have all the calorie and other nutritional information with the recipes.  I even took some pictures while making the marshmallow.

The colouring is a bit darker with these CLEAN marshmallows, but that is okay, because they are just going to get roasted anyway...RIGHT? 

I promise I will have the recipes for you tomorrow.

    could you post your graham crackers recipe? And the marshmallows as well... my kids are drooling over the screen here!
    Need to make this, so they won't drag me to the next convenience store!

      Tell the kids to hang on. I will be posting it later today, Wednesday May 23rd. I want to make sure they work. AND that they are tasty!

  2. Happy 100th Day, Trina! I can't wait to hear how your kids (and you) like the clean S'Mores. Maybe you should call them S'More Clean than S'Mores! LOL
